Sichuan Beef with Rice Stick Noodles

  1. Cook and drain noodles as directed on package. Cut into 2-inch pieces.
  2. Trim fat from beef. Cut beef with grain into 2-inch strips; cut strips across grain into 1/8-inch slices.
  3. Spray nonstick wok or 12-inch skillet with cooking spray; heat over medium-high heat until cooking spray starts to bubble. Add beef; stir-fry 2 to 3 minutes or until brown.
  4. Add chili puree, soy sauce, gingerroot and oil; stir until well mixed. Add mushrooms, cabbage and onions; stir-fry 1 to 2 minutes or until cabbage is crisp-tender. Serve over noodles.

This was AWESOME!! I doubled the recipe and everyone loved it. I served with another recipe I found called Best Egg Rolls. I suggest cutting everything up the night before.

This is the first time I have used rice stick noodles and we really enjoyed them. My husband loved the dish and I have promised to make it again. I did not have chili puree so I used hot pepper flakes as a quick sub. It gave it some nice heat and next time I'll be sure to find the right stuff. I will definitely double my quantities also. I have to feed a family of 6 and this was a stretch. We just cooked the whole package of noodles and stretched the rest.

This is very good and very spicy - almost too spicy. I think that next time I'll take it easy on the garlic chile sauce. Not sure if I like the rice stick noodles, but the boyfriend loved them! Will definitely make it again...
