Shrimp and Pepper Fajitas

  1. Heat oven to 350 degrees F. In a large bowl, combine shrimp, 1 tablespoon each oil and lime juice, garlic, 1/4 teaspoon salt, 1/8 teaspoon pepper, cumin, and chili powder. Stir to coat shrimp.
  2. Heat remaining oil in a large nonstick skillet over medium-high heat and cook onions until translucent, 5 minutes. Add peppers, remaining salt and pepper, stirring frequently, 5 minutes more. Stir in 2 tablespoons cilantro. Transfer to an ovenproof bowl and keep warm in oven.
  3. Heat skillet over medium heat and add shrimp. Saute until just cooked through, 3 to 5 minutes. Stir in remaining lime juice and cilantro. To serve, wrap each tortilla around vegetables and shrimp. Serve with salsa, if desired.

Very tasty! However, I just sauteed it all in the same pan (veggies first, then added the shrimp) instead of transferring to a baking dish. Adding jalapeno is a nice touch. Served with sliced tomato and regular tortillas.

This recipe turned out fantastic. The flavor was clean and fresh. I doubled the shrimp and peppers for 5 people and we ate the entire thing! I also added two huge jalepeno peppers and sauteed them with the shrimp but they weren't hot so I don't think they made much difference. I served it with queso fresca, avocado, salsa, spelt tortillas, and sour cream. I'm going to make this often, it'll be a great summer supper on the lanai.

I added extra cumin & chili powder and omitted the cilantro (not popular in our house). Delicious & healthy!
