This was VERY delicious! The only reason I didn't give it 5 stars is because to me, an enchilada just isn't an enchilada with some sort of sauce draped over the top. So after I wrapped my tortillas up in their meat and cheese sauce goodness, and laid them all out in the casserole dish, I poured a can of red enchilada sauce all over them, and then baked them. The cheese sauce inside is incredible! I love using roasted hatch chilies, and was even short on sour cream so subbed 1 cup of plain greek yogurt. It's a time consuming recipe, but very worth it!
