My husband and I made this recipe with the following exceptions: left out the oregano (it did not seem to mesh well with the other flavors to us), halved the cayenne (this gave it just a slight kick) & left out the red pepper flakes because we were out, substituted 1/2 cup pineapple juice & 1/2 cup chicken broth for water, upped the garlic to about 6-8 cloves (hard to tell because we used minced garlic), and let the thighs marinate for about 6 hours, then grilled. We also cooked the leftover marinade to reduce it and thickened with a bit of corn starch. All these were suggestions made by other reviewers. We cut up the chicken when done put it over white rice and then poured a bit of the sauce over it. OMG! was this ever good!! It may not be true blue Shoyu Chicken according to some, but you know what? Whatever it is, it is well worth the time and effort!! We had leftovers the next night and could not wait for dinner!! This stuff is good over rice, with pasta, in rollups, even sandwiches!! Do your taste buds a favor and try it, especially if you can grill it. Happy Eating!!
