3/4 cup butter
3/4 cup sifted confectioners' sugar
1/4 cup packed brown sugar
1 egg
1 1/2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1/2 cup toasted pecans, finely ground
1/4 teaspoon salt
I adapted these cookies to my taste by using hazlenuts instead of pecans and gave them as Christmas jar gifts last year...thanks for the inspiration!
The cookies are good, but even after an hour chilling in the refrigerator, they were way too soft to roll out or use cookie cutters.
