This is a labor of love, lots of stirring and timing to get all the ingredients added and the risotto creamy and wonderful. But, it's well worth it. When it's ready, a sprinkling of Parmesan cheese and slivers of basil finish it perfectly.

Hey, seafood lovers! This is a delicious dish for you. It includes scallops, shrimp and imitation crabmeat along with mushrooms, garlic and onions. They're all mixed together with noodles in a creamy sauce. If you want, you could spice it up by adding a chopped jalapeno pepper.

I put these ingredients together in hopes of creating a vegetarian friendly meal high in protein and using goat cheese and risotto (two of my favorite foods!). The result: a delicious, satisfying, elegant meal for two! Mmmmm!

Stir up a magnificent risotto using leftover lamb, onions and artichoke hearts. Use only genuine Italian Arborio rice, available in the specialty section of most grocery stores. The finished dish should be slightly soupy so that it can pour from the pot.
