  1. Place sweet potato in a microwave-safe bowl; add water and salt. Microwave until partially softened, 2 to 3 minutes; drain.
  2. Heat olive oil in skillet over medium heat; cook and stir onion in the hot oil until slightly softened, 3 to 4 minutes. Stir sweet potato, ham, cinnamon, cayenne pepper, and salt into onion; cover skillet with a lid. Cook sweet potato mixture, stirring occasionally, until sweet potatoes are cooked through, about 10 minutes; sprinkle with brown sugar. Cook and stir until brown sugar is dissolved, 1 to 2 more minutes.

I thought this was more sweet than savory, but it was very good nonetheless. I only added a couple of sprinkles of cayenne pepper, and that gave it just the right kick for my taste. I also served with an over easy egg on top and loved the creamy yolk mixed in with the soft sweet potato and ham mixture. This was a healthy and filling breakfast for me, and I will definitely be making this again.

This was tasty. I doubled all of the ingredients and served it with eggs and toast as a breakfast dinner for my family.

This was wonderful. I actually used this as a "jumping off" recipe and it turned out very nicely. I added one ingredient, some diced apple. Due to making it for a crowd I increased everything(except the cayenne) and baked it, layered (1/2 the potatoes first on which I sprinkled the cinnamon, cayenne and brown sugar, then the apples/onions, topped with the ham, then repeated) in a 9 x 13 dish with just enough water to cover the bottom of the dish, altho I think apple or orange juice would work great. I dotted the top with 6 thin pats of butter- did not use the oil called for- and covered it with foil during baking. Flavor was great and it was a perfect brunch dish. It took longer to bake than I thought it would; it cooked at 350 degrees for about 1 1/2 hours to get the potatoes soft ( I had pre-microwaved the potatoes but they were still pretty hard when I loaded the casserole).

This was fantastic, made no changes hubby loved them. Made them twice first time with the ham. Second time forgot to buy the ham so I fried chopped bacon and it also turned out great.

Made this a few weeks ago as a side dish for my family .. It was a HIT !! Will definitely make again. The only change to the recipe was using bacon instead of ham steak

Simple and tasty. We prefer this without the added salt or sugar. The ham and sweet potatoes are sufficient. Loved the kick the cayenne gave.

Delicious. Used recipe exactly as written. Just added a bit of water while cooking to prevent sticking. Served with over easy eggs on top. Husband loved it. Its a keeper. Good for breakfast, lunch or dinner.

It came out nice. I used it as a side dish to rice and peas and steamed broccoli.
