Ingredients

  • 1 pound bulk pork sausage
  • 1 medium onion, chopped
  • 2 medium carrots, grated
  • 1 medium green pepper, chopped
  • 3 cups diced cooked potatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. In a skillet over medium heat, brown the sausage. Add onion, carrots and green pepper; cook until tender. Stir in potatoes, salt and pepper. Reduce heat; cook and stir for 20 minutes or until lightly browned and heated through.
