Sausage, Cheddar and Hash Brown Bake

  1. Press hash browns onto the bottom and up the sides of a greased 13-inch x 9-inch baking dish.
  2. In a skillet, cook sausage and onion over medium heat until sausage is no longer pink; drain. Spoon over hash browns.
  3. In a large bowl, beat the eggs, milk, parsley, salt and pepper. Pour over sausage mixture.
  4. Cover and bake at 350 degrees F for 35 minutes. Uncover; bake 20-25 minutes longer or until center is set. Sprinkle with cheese; bake 5 minutes longer or until cheese is melted. Let stand 5 minutes before cutting.

  • Options:
  • For a spicier dish, add 1/2 teaspoon red pepper flakes to egg mixture.
  • To reduce cook time, in a microwave, heat hash browns until hot before pressing into baking dish. Cook time will decrease by 15-20 minutes.

I made this casserole for some of my friends and they thought that it was wonderful. I thought that it was a little bland however. I will make it again and try some different spices. I think maybe the red pepper flakes will help. It was mainly the hash brown part that was bland though because I like really crispy hash browns and these, of course, are just baked.
