  1. PREHEAT oven to 375 F.
  2. HEAT vegetable oil in large skillet over medium-high heat. Place tortilla in skillet. Cook for 1 minute on each side or until golden and slightly crisp. Place tortilla on bottom of lightly greased 9-inch pie plate. Add chorizo to skillet; cook over medium-high heat, stirring frequently, for 3 to 4 minutes or until cooked through; drain. Spoon 1/2 cup salsa over tortilla; top with chorizo.
  3. COMBINE eggs and cream in small bowl; add cheese and cilantro. Pour egg mixture over chorizo.
  4. BAKE for 25 to 30 minutes or until knife inserted in center comes out clean. Cool for 5 minutes on wire rack. Cut into wedges; serve with salsa.

Used a 9" deep dish pie crust and regular breakfast sausage (Jimmy Dean) a little more cilantro and WOW - excellent.

Was really surprised how easy this recipe was and how quickly it went together and how GOOD it was. My husband liked it too. We'll use it again.

I have just begun to make quiche and this one is by far the best. I was a little leary of what my husband would think of it, but I have ever seen him eat the entire dish of it in one night.

I loved this recipe! But I ate it for dinner since it had a spicy punch. Instead of chorizo, I used chicken italian sausage from Marketday for a healthier, reduced-fat version.

My Husband loves chorizo. I used a basic pie crust recipe, instead of the tortilla. This made it more like a traditional quiche. We loved the recipe, alot of flavor! Mindy-Dallas,Tx
