Original recipe makes 42 cookies Change Servings

Directions

  1. Preheat oven to 350 degrees F.
  2. Beat butter and 1/4 cup SPLENDA® Granulated Sweetener at medium speed with an electric mixer about 2 minutes or until creamy. Gradually add flour beating at low speed until blended. Stir in vanilla and pecans. Shape into 1-inch balls.
  3. Bake 20 minutes; remove from oven and place on wire racks to cool.
  4. Process 2 tablespoons SPLENDA® Granulated Sweetener and cornstarch in a blender or food processor; roll cookies in powdered SPLENDA® Granulated Sweetener mixture.

This was so quick and easy. I have found a new cookie recipe when I need something for surprise guest. They are not dry like I thought they would be. Most of the cookies were gone before I got the second batch out of the oven. I bet adding a 1 tsp of cinnamon to the recipe or the the Splenda that you roll them in would be really good.

I enjoy these cookies with coffee! They are very much a "sandy" cookie.

Tasty but make sure you have some coffee, tea or milk nearby. They don't call them Sand Tarts for nothing!

These are excellent. Very flavorful, but not too strong. Very similar to biscotti.
