Yum! Tried this today and it was good. Only change I did was I used shallots and champagne instead of wine. I will make this again!

I do Valentine's day dinner at home with my family. It has become quite the wonderful tradition. The main dish and dessert are always the same and I change up the side dishes. This year, I made Robin's Quinoa with Mushrooms and Spinach and it was a HIT! My husband RAVED and my daughter loved it. Everything about this dish - Magnificent. I will not save this recipe for the once a year fancy meal. We WILL have this often. SO Good!

This was very tasty!!! I added a little fresh parsley to it and substituted the wine for apple juice.

i love quinoa and this is a nice twist on quinoa recipes I had tried in that past. Feels quite hearty with an almost risotto feel. I usually get about 3-4 servings out of it. Is nice cold as well as hot

It was good, but the wine and salt (from my chicken stock) were way too overpowering. I cooked some salmon in the after-mushroom pan, which was delicious. I think next time I wouldn't use as much (if any?) wine and way less stock.

Yes! I finally made Quinoa without it looking like a translucent blob. Thanks, this recipe is great!

love this recipe. I have been cooking this for almost two years now. I do make a few minor changes. I think the balsamic vinegar is too overpowering so I cut it in half and I use vegetable broth to make it vegetarian. Occasionally increase the amount of mushrooms because I love mushrooms!

I've made this recipe several times and every time it's worked out very well. Tonight I made it using Bulgur instead of Quinoa and it was equally delicious. For a special treat and to improve the presentation, I toss a handful of roasted, salted cashews on the top immediately before serving.

I altered this so as to cook it in my rice cooker. Added a wee bit of nutmeg to complement the spinach, and mixed the goat cheese right in at the end of cooking. Great side-dish to pair with "Fig and Lemon chicken" from AR.

Amazing recipe - it turned out beautifully. I was looking for any dish with spinach and mushrooms (wanted to free some fridge space) and came across this dish. I have tried quinoa before, mainly in soups, and quite liked it for the health effects of this wonderful little grain. This recipe opened some new cooking opportunities with quinoa. We absolutely love spinach, and it is a great combination. Thank you, Robin!
