Directions

  1. Prepare Bob Evans Original Mashed Potatoes by following the recommended microwaving instructions on the package.
  2. Mix in 2 Tbsp of prepared horseradish until well combined.
  3. Place 6 oz. of Bob Evans Original Mashed Potatoes with horseradish in a martini glass.
  4. Top with 2 slices of medium rare roast beef, mounded in the center.
  5. Top with 1 oz of au jus.
  6. Place 2 Tbsp goat cheese over beef and au jus.
  7. Top with 1 tsp. crispy shallots
  8. Garnish with fresh snipped chives
