Roasted cauliflower is my family's favourite cooked vegetable which I've made for years. We do two things differently. Instead of salt and pepper, I use a bit of onion salt. And sometimes after it has roasted, I mash or whip it until it has the consistency of rice before I add the cheese to broil. This version is as big hit with kids who think they don't like vegetables. We all love this, and it is healthy too!

I made it just as is and it was SO GOOD. We ate an entire head of cauliflower. I will definetly try this with other veggies.

This is excellent! I didn't have parsley so I chopped some cilantro but kept everything else exactly like the recipe. So good, so easy. It is the best cauliflower I've ever tasted. Thank you so much for sharing this recipe.

Tasty and healthy. Easy to cook and I like it because it can be served alone or as a side dish. I prepared roasted garlic cauliflower for my guest and they were impress from it. Thanks for the recipe :)

Delicious! Will definitely be making this again. Used 1/2 the cheese and cheddar instead of Parmesan (because that's all I had) and it was still amazing!

I made this w/ a mixture of broccoli & cauliflower and it turned out great. I also baked covered in foil and removed the foil at the end right before I added the cheese. 5 stars, easy and yummy.

Our family loved this recipe! My husband forces himself to eat cauliflower and he said he loved it because it didn't taste like it. I added some extra spices (garlic/rosemary and some garlic salt). Otherwise, followed all directions. It is now on the dinner rotation. I'm going to try mixing it with broccoli next time for variety.

Excellent recipe. I par boiled the cauliflower (or you can microwave) for approx 6 mins, using cold water to start this process. I then roasted the veggies after seasoning. Perfectly roasted and nicely browned.
