Easy to make, not a lot of ingredients. although I ran out of olive oil and garlic, I made mine with just one tablespoon of garlic and 2 tablespoons of vegetable oil, I could smell it cooking and I could only imagine how tasty it would be with the correct amount of garlic! I read in previous reviews about covering the casserole dish and bake it at 400F. I did not think there was a need in that. Cannot wait until I have all of the correct amounts to make tasty roasted garlic cauliflower. Thanks for sharing!

great and simple way to enjoy cauliflower. I've tried it twice with the cheese (and breadcrumbs) and after last night, fiance and I agree: its would be just as tasty without the cheese... we like simply seasoned veggies so salt and pepper is delicious enough for us.

Don't understand the reviewers who lowered the heat and "covered" the dish?? That just makes for steamed cauliflower without the wonderful carmelizing of roasting vegetables. :-/

Roasted cauliflower is my family's favourite cooked vegetable which I've made for years. We do two things differently. Instead of salt and pepper, I use a bit of onion salt. And sometimes after it has roasted, I mash or whip it until it has the consistency of rice before I add the cheese to broil. This version is as big hit with kids who think they don't like vegetables. We all love this, and it is healthy too!

I made it just as is and it was SO GOOD. We ate an entire head of cauliflower. I will definetly try this with other veggies.

This is excellent! I didn't have parsley so I chopped some cilantro but kept everything else exactly like the recipe. So good, so easy. It is the best cauliflower I've ever tasted. Thank you so much for sharing this recipe.
