I love this so much, I make it once a week! I always use yams, sweet potatoes, red and golden beets, and just 1/4 of a red onion. I've even added baby carrots when I was short of veggies; I put them in with the beets. The first time I made it as written and it was way too peppery for me, so now I just use 1/4 tsp. ground black pepper. Try it, it's awesome!
