1 1/2 pounds thin asparagus, trimmed and cut into 4-inch pieces
2 tablespoons olive oil
1/2 cup honey
1/4 cup white wine vinegar
2 cloves garlic, minced
1 pound mixed salad greens
1 apple - peeled, cored, and sliced thin
1/4 pound shredded sharp white Cheddar cheese
Very good. I used half the amount of honey in the dressing, and added grilled chicken. I grilled the asparagus as well. Next time, we'll add walnuts and more cheese. Maybe substitute gruyere....still, this was a great salad.
We love this salad--even the kids eat it! I use less honey in the dressing and I think it is plenty sweet. I also roast the asparagus for less time because I like thin asparagus so it gets done more quickly.
