peeled and deveined prawns, diced 3/8-inch
NAKANO® Natural Rice Vinegar
fresh grated lemon zest or dried lemon peel
2 large cloves
garlic, finely chopped
Arborio or medium grain rice
finely shredded Parmigiano Reggiano cheese
Freshly ground black pepper
This did not taste anything like scampi I've had in the past. The flavor was very unpleasant -- we couldn't eat it. I had doubled the recipe because we had twice the amount of shrimp it called for, but no one in the family liked it. We went out for sandwiches that night. I don't mean any disrespect for the submitter of this recipe, but save yourself the trouble and make something else.
Unfortunately for the submitter, this tastes a lot better without the vinegar.
