Red Beans and Rice with SPAM®

This is a recipe that my mom made for us while growing up. We live in Minnesota, where SPAM originated, and my father is Puerto Rican; this was an ingenious way for my mother to weave the cultures together. This is a quick and tasty meal, enjoy!

With red kidney beans, rice, cheese and plenty of spices, this recipe makes a nice version of a classic dish. It can be served as a main dish, and is quite good when accompanied by a salad and some crusty bread.

Filling, flavorful and easy to make, this New Orleans-style dish is a Monday night tradition in Louisiana. And the addition of smoked turkey sausage makes it perfect as a delicious meal all by itself, or as a robust side.

Red beans and a ham hock slowly simmer with seasonings for maximum flavor. Smoked sausage is stirred in towards the end for a hearty, hot meal that's perfect when the cold winds blow.

This is my take on a Louisiana classic. No shortcuts! Put everything into the slow cooker in the morning and you will have your meal ready in the late afternoon or evening, whenever you are ready. This recipe will feed a lot of people.

'I adapted this recipe from a cookbook to eliminate time-consuming steps like browning the sausage and soaking and boiling beans,' explains Brenda Heidoff Leonard of Missoula, Montana. 'Red pepper flakes add zest to this satisfying dish that's chock-full of beans and flavorful sausage.'

This is an easy and delicious take on a Louisiana classic that you can prepare and cook in 40 minutes! I use turkey kielbasa to cut down on the fat, but not the flavor.

We've lived here, where Cajun cooking is common, for nearly 25 years and have come to rely on this staple menu item. If you've never tried red beans and rice before, I assure you'll like this recipe.--Jackie Turnage, New Iberia, Louisiana

My current version of a classic recipe here is still a work in progress, but it's a pretty good one. This is a meal in itself, and tastes even better the next day when reheated.
