Original recipe makes 60 (2-tablespoon) servings Change Servings

3 cups water
1 (8 ounce) package ZATARAIN'S® Red Beans and Rice
1 cup salsa

2 tablespoons chopped jalapeno peppers
2 (8 ounce) packages cream cheese, softened
2 cups shredded Cheddar cheese

Directions

Prepare Rice Mix as directed on package, using 3 cups water instead of 3 1/4 cups.
Reserve 1/4 to 1/2 cup of the shredded cheese to garnish dip, if desired. Stir remaining ingredients into rice mixture. Place mixture into food processor or blender; cover. Process or blend until smooth.
Keep dip warm in a chaffing dish or slow cooker, if desired.

I felt obliged to splurge on "Fat Tuesday", and made this for my family. OH BOY did they/we dig in! It was super easy to make, and if you have leftovers, a cinch to reheat as well. I used the Tostitos Scoops, and we just had a great time! Will definitely be bringing this to parties in the future....
