Our family really loves this recipe, but I did make some modifications based on what I had on hand and on the reviews. Subbed 2 cups old fashioned rolled oats for the quick cooking oats. Added 1 T. almond extract, 1 T. milk, and 1/4 c. applesauce and reduced the margarine to 1/2 cup in the cake/oat mixture. Used 2 cups raspberry jam and subbed 1 1/2 T. lemon juice for the water. Very easy to prepare, wasn't too hard to spread in the pan for the bottom layer, but sprinkling the crumbs over the top layer was much more difficult due to the stickiness of the dough - (due in large part to the changes I made)- The bars did crumble some, especially the first two out of the pan, but otherwise held up pretty well. To be honest I tried all the modifications, but I think either going with either 1.) just the applesauce substitution or 2.) just the milk addition because the dough is pretty sticky if you do both at once. Will definitely make again, with only one of the above changes for adding moisture to cut down on the stickiness.
