Raisin-Nut Chocolate Cake

Ingredients

  • 1 cup chopped walnuts
  • 1 cup raisins
  • 1 cup miniature marshmallows
  • 1 (18.25 ounce) package chocolate cake mix
  • 4 eggs
  • 1 cup mayonnaise*
  • 1 cup water

Directions

  1. In a bowl, combine the walnuts, raisins and marshmallows; set aside. In a mixing bowl, combine cake mix, eggs, mayonnaise and water. Beat on low speed for 30 seconds. Beat on medium for 2 minutes. Stir in nut mixture.
  2. Pour into a greased and floured 10-in. fluted tube pan. Bake at 350 degrees F for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

  • Reduced-fat or fat-free mayonnaise may not be substituted for regular mayonnaise in this recipe.
