This is amazing. Lots of interesting combinations of flavors, fresh , light and yet filling. The only thing I did different was to add a whole pepper for more spice. My husband even cleaned his plate!

Love, Love, Love. Just a fun and yummy salad with a beautiful merriment of flavors. I have made it both with and without the mint and I don't know that I even noticed so if you don't have mint on-hand don't fret. I also used Spinach once as well instead of Arugula but I do like the spiciness of Arugula.

I made this recipe exactly as it was written and it was amazing. My first experience with making quinoa! Everyone LOVED it at my Easter party! I will definitley be making this one again.

It really was an odd combo which I normally like but not this time. I would cook the onion or eliminate it and definitely do something other than grapefruit which is why I tried it in the first place but it left a werid aftertaste. Something sweeter like oranges may work better not sure if I'll try again

Delicious! I forgot the pepper and the mint, added a little bit of seasoning salt and cayenne pepper. Subbed in mandarin oranges for the grapefruit for the welcome citrus punch. Perfect for a fresh summer meal. Leftovers packed up well and were just as good for lunch the following day.
