1/4 cup honey mustard
2 tablespoons pineapple preserves
8 (10 inch) flour tortillas
1 1/2 cups shredded Swiss cheese
2 tablespoons butter
2 cups chopped cooked chicken
1/2 cup cooked crumbled bacon
1 1/2 cups unsweetened pineapple tidbits, drained

DIRECTIONS
In a small bowl, stir together the honey mustard and pineapple preserves. Divide the mixture evenly between 4 of the tortillas. Spread evenly to within 1 inch of the edges. Distribute the Swiss cheese, chicken, bacon evenly over the pineapple mixture; top with remaining tortillas to make quesadillas.
Preheat the oven to 250 degrees F (120 degrees C).
Heat a large skillet over medium heat. Melt a small amount of the butter in the skillet, tilting the pan to cover the surface with butter. Place one of the quesadillas into the skillet, and fry on each side until lightly browned and the cheese has melted, about 1 1/2 minutes per side. Keep cooked quesadillas in a warm oven while you fry the remaining.
To serve, cut each quesadilla into 6 wedges and arrange on a platter with pineapple tidbits in the center.

This is the best combination of chicken and fruit that i have tried. The sweetness from the preserves and the saltiness from the bacon is the best. My kids and husband request this meal all the time.

This was unique and I ate quite a bit of it, but it just wasn't good enough that I want to make it again. I certainly recommend trying it once. It was not bad.

These were absolutely FANTASTIC. I made them for a party, and everyone loved them! Make a little extra pineapple preserves/honey mustard dip on the side for dipping. The swiss cheese is amazing!

These are good, and a nice change from the typical Mexican style quesadilla. I thought there was only enough filling for three quesadillas, not four. I only had spicy brown mustard, but I mixed some honey with it. I put some of the pineapple tidbits inside the quesadillas instead of serving them on the side. I liked the flavor combinations and my only complaint is that the quesadillas seemed a little dry.

Delicious! We all loved these including my two and five-year old. Used apricot preserves instead of pineapple preserves. Added a little shredded cheddar too.

i sauteed some onions and garlic in the bacon drippings. i also did not have any pineapple preserves so i just used fresh diced pineapple. this was really good!
