Quick and Easy Hush Puppies

"I don't normally like hush puppies. They are generally too dry, too dense, and too bland for my taste. After tasting some in a restaurant that I actually liked, I decided to come up with a recipe of my own. This one deliberately uses stuff right out of the pantry so that it can be whipped up quickly and served fast."

Directions

  1. Mix corn muffin mix, salt, garlic powder, onion powder, black pepper, and cayenne pepper in a bowl until blended.
  2. Stir eggs and evaporated milk into dry ingredients until moistened.
  3. Stir cream-style corn into mixture to make a moist batter. Let batter stand while oil heats.
  4. Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  5. Gently drop a teaspoon of batter at a time into the hot oil, staying as close to the oil as possible to avoid splattering. Fry hush puppies until golden brown, about 3 minutes per batch.
  6. Remove hush puppies with a slotted spoon and place on a paper towel-lined plate to drain. Sprinkle with salt if desired.

  • Cook's Notes:
  • This recipe is written for the Jiffy® corn muffin mix, which is very sweet. If you use another brand the balance of flavors will be off and you will likely need to adjust the seasonings.
  • If the hush puppies are not done enough, you can put them in the microwave for 30 seconds to finish them.

My family loves sweet hush puppies with corn so this recipe was right up our alley! I did add a little flour to thicken the batter and I left out the cayenne (for my little ones). I will use this recipe again but I will cut it in half. The yield was way too much for us.

this is a decent recipe. it's a little soupy, which is why i gave it a 3 star. you have to be careful when putting it in the oil. i did things a little different, i upped the spices (all of them) to give it more flavor and i also added some corn starch to thicken it. but you can also you flour. over all it turned out pretty good and i think i will definitely be using this hush puppy recipe again.

I did take another reviewer's suggestion and add a little flour to thicken the batter (I didn't measure, I just added until it was the consistancy I was looking for)--it was quite wet without the additional flour. I also threw in a few chopped green onions. Very easy to prepare, the hardest part about it was the frying and not because it was hard, only time consuming. We used this as a side for Ham Bone Chowder as "dippers"--NO leftovers.
