These turned out really good. I didn't like taste of ginger so I used very little in the mix, next time I will leave out all together & only use as a garnish if gifting them. I followed suggestions by other users - creamed butter & sugar well and was able to scoop batter into cups. Also used suggested frosting: 1/2 cup unsalted butter, 4oz cream cheese, 1 tsp vanilla & 2 cups powdered sugar, 1 tsp cinnamon (mixing cinammon well into sugar first). This frosting was AMAZING! Cook time in my oven was 18 minutes & yielded 30 cupcakes.
