Very forgiving recipe. I had leftover broccoli and asparagus so it all went in. Did not have cheddar or swiss so added about 3 oz cream cheese instead. The dill was a nice addition. And I cooked it like a frittata (cooked eggs and veggies together with a lidded pan). Yum!

This ended up being an easy and flavorful Sunday night supper for us. It could use more seasoning, but that is easy enough to adjust to suit your tastes.

I'm a huge fan of the omelet (what a terrific invention) and absolutely loved this recipe! I scaled the broccoli, tomato, and onion up a tiny bit because I'm pregnant and in "health freak mode." I also cut back on the butter. But otherwise I followed the directions as stated. It felt good to have a nice full serving of vegetables first thing in the morning. Thanks for the recipe!

Didn't use the cheese. Taste was good. Dill was a good idea. I cooked the potato in water before to make it soft, brocolli cooks quick.
