Potatoes are cooked, then cut into spears and tossed with a garlic infused vinegar and oil dressing. When chilled, the potatoes are topped with chopped and diced apples, bacon, olives and red onion.

After you 've cooked and diced the potatoes and added the olives, celery, and onions, you 'll stir in a dilled vinaigrette, and pop the almost-potato salad into the fridge. Then comes the yummy part. A yogurt/honey/mustard/garlic dressing is gently folded into the chilled salad, then chilled again until ready to serve.

This salad begins with red potatoes, which is a very good sign, and ends being tossed in a really nice dressing spiked with lemon juice. A pleasant taste change from the same old, same old potato salad.
