Ingredients

  • 1 cup white sugar
  • 2/3 cup packed brown sugar
  • 3 eggs
  • 1/3 cup butter
  • 1 cup pinto beans, cooked and mashed
  • 1/3 cup chopped walnuts
  • 1 recipe pastry for a 9 inch single crust pie

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream together butter, sugars and eggs (slightly beaten). Add beans and nuts, mix well and pour into unbaked pie shell.
  3. Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes.
