My grandfather is Polish, and his mother taught my grandmother how to make these delicious perogies. Serve plain, or with butter, sour cream, bacon, etc.

This recipe is an Ukrainian one of my Great-Grandmothers passed down from the years. They are great with melted butter and sauteed onions, or fry if desired. They can also be frozen between layers of plastic wrap.

Fashion delicious piergi wrappers out of flour, eggs, sour cream, salt and water, then stuff them with a savory sauerkraut filling or a traditional potato and cheese filling. Cook in boiling water or freeze for later use.

Ukrainian Filled Halushky Dumplings

Halushky is a Ukrainian name for dumplings made of batter or thick dough mixture. Various ingredients are added for tenderness, texture, flavor, and food value. They are served with a stew, or roast and gravy, or as a side dish. Good halushky should be light. Their lightness depends on the proportions used and on the method of cooking them. This standard recipe may be varied as desired. Dry curd cheese is preferred for a filling because a wet, creamy one will melt giving flat and empty varenyky or halushky.

For old-world comfort food, make pierogi wrappers out of egg, milk, flour and salt, stuff them with a simple blend of egg and cottage cheese, then cook in boiling water. Serve with warmed sour cream and crisp bits of bacon on the side.

My grandma made these every Thanksgiving. I have carried on the tradition. I always make more than we need. My family loves them sliced and fried with the leftovers. Serve with gravy.
