Peeling eggs once hard boiled. Well, I have never punched a hole in them, but I do crack them well and peel from the large end of the egg. have, for many decades, used eggs that are getting close to their expiration date. They just peel a whole lot easier as the membrane inside the shell isn't as firmly wrapped around the internals. Running them under cold water while peeling, or peeling while submerged in a pot of water makes the process a whole lot easier. Finally, my grandmother taught me to peel eggs using your thumb and working from the side of the cracked egg. Works great for me. This recipe is about as basic as you can get, but believe me that this is a really great old recipe.
