Really enjoyed this for dinner tonight - it was posted as the "Recipe of the day" and I already had Cooking Light's shrimp fettuccine on my 2-week menu plan to prepare at some point (I just list everything for dinner for 14 meals but I don't assign a date, more random to what fits our life). This recipe was easy to accommodate to and am so glad to have tried something new! What I liked was that in the time it took the pasta (gluten free for us) to boil, the rest of the meal was ready to go, plus a tossed salad, warmed bread, & table all set. One of those awesome, zippy-gourmet meals. I used a combo of green, red, & yellow bell pepper and topped with fresh basil leaves.
My daughter said it tasted like something at a restaurant. Husband said it was even better :)
