This is a really good recipe and I tried the suggestions made by Robert. However, the rub was too spicy for my kids who usually eat just about anything I make. We cut the seasoning off and they ate it anyway. The recipe says it makes 4 servings but a 2 1/2(ish) lb. roast fed 3 adults and 4 kids with leftovers.
The recipe was just fine, super easy and good but I dont know who's cooking a 4lb roast in an hour or so on 350. Mine wasnt near done at 10:00pm and even then I had to finally slice it & put it back in so we could eat & go to bed by midnight!
This was the Best Recipe. The only thing I did different was to put some garlic, onion powder and sea salt. Hmmm Hmmm Good! I loved the pepper. Thanks Robert

Good old standard for roast pork.
I have been cooking my pork this way for 40 years except that I add kosher salt. The pork should be a bit pink, don't overcook.
I took the advice to add salt, garlic, onion powder, with the pepper blend. I amso add some mrs dash garlic blend. I ama picky eater and dont care for pork but with this recipe I liked it and so did my picky 2 yr old. So for those who do not care for pork this is a good recipe when the rest of your family does.
This is definatly my favourite way to have a roast beef,works well with Prime rib also, Yum 5
