I was looking for a quick, easy bar recipe and had a roll of sugar cookie dough, so despite the lack of reviews I decided to give these a try. The suggestion of lime & coconut by another reviewer piqued my interest, so I sprinkled about 1 cup shredded sweetened coconut on the cookie dough before baking, omitting the pecans completely. The amount of filling looked much too small for the pan size, so I doubled the filling ingredients, except for the flour -- keeping that at 5 T to keep it from being "cakey".
With all the changes they were great! Of course, nothing lives up to a made-completely-from-scratch lemon bar, but for a quick, easy dessert, go for it!
