Yum! Left the zucchini peel on so the cookies were a tint of green... called them martian cookies for the kids and they were a big hit! No suspicion of veggies. As per the adults - a nice solid cookie. PS. No eggs in this family, so I used an egg substitute.

These were pretty good. I was undecided with the first half of the batch, then I added chocolate chips to them, mmmmmm dimension added. I substituted Butter for the shortening because I just don't like using shortening in my cookies. I also added an extra half tsp of vanilla and used creamy peanut butter since thats what I had on hand (might have been good if I had added some nuts to it too though to make up for the creamy peanut butter). They ended up tasting a little like a Peanut butter russian teacake, good reviews from everyone here.

I have had a similar recipe for years and have always enjoyed it. Even people who think they don't like zucchini love these cookies. In the summer when zucchini are plentiful, I freeze 1 cup bags of grated zucchini and then in the winter, I have plenty of zucchini for cookies, muffins and more.

I just made these -- I have the last batch in the oven right now. I tasted the ones that have cooled and they are moist and delicious! I made them on a whim because I had very few ingredients (I, too, substituted the shortening for 1/2 cup butter and 1/2 cup oil... great tip, thanks!), but I had an extra zucchini lying around from a veggie lasagna I made earlier. They'll make a great late night snack later on :)

Delicious and easy recipe. I am always looking for new zucchini recipes, especially for ones without spices, since most zucchini baking recipes have nearly the same flavor. I made these for a labor day family gathering and everyone, from kids age 7 to a picky 81 year old loved them. I highly recommend these...the only things I did differently was to use 1/2 c. butter and 1/2 c. oil as I had no shortening, & I used smooth peanut butter. Excellent. You can even add a bit more zucchini, since that just moistens the cookies further.
