Pam's African Chicken Stew

Directions

  1. In a large skillet with a tight-fitting lid, heat oil over medium high heat. Add chicken, and brown quickly. Remove chicken from pan. Reduce heat to medium low, and add garlic, onion and sweet potato to the pan; cook for 5 to 7 minutes. Season with cumin, coriander, red pepper, and salt and pepper.
  2. Mix in chicken broth and browned chicken. Place lid on skillet and simmer, stirring occasionally, for 10 to 15 minutes.
  3. Remove lid, and stir in the peanut butter and garbanzo beans. Make sure the peanut butter is blended in. Replace lid to simmer for 2 more minutes.

Delicious! A big hit with both my husband and mother-in-law. I did not have coriander and I added a bit more of the other spices than the recipe calls for. Also added carrots (as per an earlier review) and raisins and served over brown rice. The second time I made it, I waited longer before adding the sweet potato to prevent it from "dissolving". Next time I think I will add 1/2 early and 1/2 later so we get the flavor in the broth as well as solid pieces. A delicious meal!

I don't think this dish was all bad at the same time it's not all it's not all that it's supposed to be the peanut butter more or less ruined the taste so then I tried it with some alfredo sauce and it was just a little better but it was well seasoned still could have used probally some cayanne pepper or something else hot

Just made this dish for dinner tonight and though I've never cooked a stew with peanut butter before, it gave it a creamy richness and smooth flavor that we really loved. Very tasty! If you like Thai, Mexican, and other spicy soul foods, then treat yourself and try this one. yum! easy to make, too.

I was in the mood for something hearty but with a different flavour, and this really hit the spot. I added more red pepper and chili powder to spice it up a bit. It tasted even better the second day ... and the third day. (I doubled the recipe.) I served it over brown rice, egg noodles and sweet potatoes -- all good, but I think I liked it over sweet potatoes best. If you're a peanut butter fan, give it a try!

Loved it. Delicious. It is inexpensive, easy and quick. A good change in the menu. I followed the recipe as stated except that I omitted the liquid in the can of garbonzo beans. I was hoping for a nice thick stew and I got it. Served it over brown rice. Reminds me of a peanut curry-type dish. The spice, sweet potato and peanut butter are great! I will make this again! May also be good over rice noodles. Mmmmmm my belly is still warm.

This was a nice change of pace meal. The only change that I made was adding a half can of black beans and half can garbanzo beans instead of all garbanzo. Next time I will be adding more corriander, garlic and salt. I think I will stick with black beans instead of garbanzo as well. The peanut butter flavor came across really well, but it also seemed to overpower the rest. Will make it again and see what happens.

Tried this with the ingredients I had on hand so I couldn't add garbanzo beans, but I did add some carrots which worked well. This is an easy one-skillet dish with a mild kick but also pleasing sweet and nutty flavours. Very satisfying!
