Oyster stew is whipped up in a matter of minutes. The fresher the oysters, the better the flavor. A fresh tasty, savory version that's sure to please.

Lobster Stew

This is it, the holy trinity of Maine seaport cooking: lobster, butter, cream. Do not adulterate with other ingredients, do not substitute margarine for the butter (lest you be struck down by lightning), and, most importantly, do not feel guilty as you enjoy this heavenly soup.

Oyster Souffle

This is an excellent side dish served with a turkey dinner. It can also be served with a roast beef dinner. It is a big hit with my family and so easy to make.

Southern Cornbread Oyster Dressing

This Cajun style dressing uses a combination of bread cubes and crumbled corn bread mixed with two varieties of onion, celery, parsley and chopped oysters to stuff a 12 to 15 pound turkey.

Oyster and Artichoke Soup

Rich, buttery soup with pieces of artichoke heart and oyster. If you love oysters or artichokes you can add half-again as much of these ingredients. You can also use 1 pint each heavy cream and half-half for a less rich soup. This soup does not freeze well so don't cook more than you can eat within a few days!

Garlic Oyster Linguini

Submitted by: Holly
Fresh linguine cooks in a heady, spicy mixture of mushrooms, garlic, Cajun spice, oysters, corn, string beans, pimentos and seafood stock. An easy roux of butter and flour thickens the dish before you add parsley, scallions and crabmeat.
