Oven-Roasted Cauliflower

  1. Preheat an oven to 450 degrees F (230 degrees C).
  2. Mix cauliflower florets and garlic in a large bowl. Drizzle olive oil and lemon juice over the cauliflower mixture; season with salt and pepper. Toss cauliflower mixture to coat and spread into an even layer onto a jelly roll pan.
  3. Roast in preheated oven for about 15 minutes, turn the cauliflower, and continue roasting until soft, about 10 minute more. Sprinkle Parmesan cheese over the cauliflower to serve.

Definitely enjoyed this, a nice way to serve cauliflower without drenching it in cheese sauce. It did take longer to cook than the recipe called for.

Need to add a tsp of cinnamon and cut the carrots in half. Also added five packets of trivia.

This recipe was good. The parm cheese addition at the end is important as it adds alot of flavor. Also, either my oven wasn't working properly, or it needed more time to cook. I expected it to be a little softer. I only used about 1/2 the salt, as it seemed like too much for my taste.

My cauliflower was almost starting to get soft in the fridge so I chopped it up and used this recipe. Used a whole fresh lemon for juice but I like it to be a little tart. Used a little extra Locatelli. Came out awesome, ate the whole head of cauliflower myself!
