I loved this dish and this technique. The spices used in the breading were right on, and the fish turned out delicious. The only thing that I did (since I had 2.6 lbs of catfish filets) was add an egg to the skim milk and about 1/2 cup of bread crumbs to the breading. I will keep making this recipe again and again since my husband really loves seafood (and I hate frying fish). A few words of caution, though - after the fish is finished baking, serve it immediately. I let it sit for about 40 minutes in a warm oven (husband was late coming for dinner) and the bottoms became soggy when they were perfectly crisp after just being done. Secondly, my filets were huge (4 filets equaled 2.6 lbs) and I had tons of breading and eggwash left over. Afterwards I realized that cutting the fish into smaller strips/pieces would have solved that problem by creating more surface area for the eggwash and breading and would have made smaller, even crisper pieces of fish!
I was excited to try this baked catfish with all the good reviews but this just wasn't for us. Wasn't crazy about the flavor of all the seasonings, way too strong.
Excellent seasoning..not too salty at all. Was crispy enough without having to flip over as one of the earlier reviewers mentioned. This cornmeal seasoning would also be great for frying fish in oil, but for the healthier version in the oven it is still A++++.
Thanks! Made this tonight (no garlic or onion powder and half the salt) and it was, as my wife said, "your best fish yet." Had all the necessary ingredients on hand, prep was quick. I also substituted crushed Triscuits for the cornmeal to make it a bit healthier -- worked perfectly.
I can't believe my tastebuds! This is better than fried! I halved the salt, added 1/4 tsp of cayenne pepper, and served with lemon and tartar sauce.
This was VERY good! My husband from the south loved it! I did add a pinch more salt and cajun seasoning to spice it up. Also, cooked it about 20 min. Thank you for a healthy catfish meal!
I will make again. The only reason I gave this 4 stars is it was wayyyyyyy too salty. And I love salt. Next time I will batter it and then just season it on the cookie sheet to my liking. Tooo bad.
This made the best catfish in the world. We always get whole catfish from our store and I usually cook it whole. I cut it in half and made it according to the recipe. The only thing I did do was add a touch of cayenne pepper. I made homemade sauce with wasabi mayo, real mayo, dehydrated garlic (my own) and a pickle in the chopper. Nice change from what we usually do with the catfish. Hubby loved it, that is half the battle.
