This was pretty good, however, had I used the entire block of Velveeta (as the recipe calls for), my rating wouldn't have been as generous. It would've been entirely too salty...and this is coming from someone who adds salt to salad and pizza! I only used 8 oz Velveeta and added an eyeballed amount of shredded sharp cheddar. I also used 4 oz reduced-fat cream cheese. In addition, I used 1lb boneless, skinless thighs and homemade taco seasoning (more than the recipe stated to compensate for the added chicken). Since I didn't have green onions, I sauteed a small white onion and added that to the mix. Since my 3 year-old was eating this too, I left out the jalapenos, and because my husband doesn't care for black beans, I subbed pintos instead. Overall, this was a filling dip on its own, served with Tostitos scoops. Next time I make it, I'll make a spicier, adult version and would use medium-hot roasted chiles in place of jalapenos.
