Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease and line with parchment paper a 9x9 inch baking pan.
  2. In a medium bowl, stir together SPLENDA® and egg whites, then mix in applesauce. Stir in yogurt and orange zest. Combine the flour, baking powder and baking soda; stir into the mixture just until blended. Pour the batter into the greased and lined 9x9 inch baking pan.
  3. Bake for 30 minutes in the preheated oven, or until a knife inserted into the cake comes out clean. Poke holes in the cake with a knife, and pour the juice from the oranges over the cake slowly until it has all been absorbed.

I actually liked this at first, it has a bit of the rubbery texture that Splenda cakes all seem to, but the flavor was good with the orange covering the Splenda aftertaste fairly well. However, in the last bite I got a real blast of bitter, might have been a Splenda thing, may have just been some orange or lemon peel that didn't mix well enough, no way to be sure. Long story short here, if you make it, make sure it mixes *really* well.

I like the orange zest, but beyond that it was pretty bland. Like an orange cornbread without the corn. Maybe it would be better warmed up with butter and honey just like cornbread.

Taste-wise it was pretty good. The orange zest really added to the taste. It is a bit spongy though.
