"This wonderful, fresh, summery dish, is very easy to make. I'm relatively new to fennel, but this recipe definitely highlights the wonderful, licorice-y flavor and complements it well with the citrus. This would be a great choice to accompany a fish or chicken dish."

baby spinach leaves
oranges, peeled and sectioned
fennel bulb, thinly sliced
chopped fennel fronds
toasted sliced almonds
chopped fresh mint
salt and pepper to taste
I followed the recipe exactly except not sure about size of arugula since I don't have a way to measure. My husband and I agreed that is was nice to have something different, but there are other salads we like better. Unusual, but not over the top great.
