I make a double batch every Saturday. We love them and I love that I can make them from what I always have on hand! If you get inconsistent results (I definitely have), here are my suggestions:
1. Replace butter with vegetable oil or warm the milk. I found that when I mixed the melted butter with cold milk, it rehardened. I started using vegetable oil instead and my results have been better. I cook them in butter to get some butter flavor back.
2. Add milk gradually and get familiar with you preferred batter thickness. I don't know if my flour and milk measuring skills are poor or what, but sometimes these are perfect and sometimes too thin. For me it came down to having too much milk on the thin days, so I pour the milk in a little at a time and keep an eye on the consistency.
And if are little short on milk, don't be shy about adding water. Just add gradually and watch the consistency and it will work out fine.
