This recipe is absolutely delicious! I did what the others suggested by replacing some of the half and half with coconut milk (I used a whole can) and replacing the flour with 1/3 cup of corn starch. The pie turned out beautifully.

I made this for Thanksgiving....My family thought this pie was soooo good! I just changed a few things, I used 1 1/2 cups coconut milk and 1 1/2 cups half and half, coconut extract instead of vanilla, and 1/4 cup flour and 1/4 cup cornstarch. Thank you for sharing.

I made four of these over the Thanksgiving holiday and everyone loved them! I used the cocoanut milk and half and half. I also thickened the filling in the microwave stirring about every 3 minutes. Great pie!

This is the best Coconut Cream pie I have ever had. So much better than Jello brand. It does take a little time, but you can't beat the flavor. I also did 1 1/2 C. each of half & half, and coconut milk, and instead of using flour, I used corn starch. I made the coconut custard in a double boiler, it turned out wonderful & it got rave reviews at Thanksgiving this year.

YUM! This recipe was delicious. I made one following the recipe exactly and one using the 1/3 cup of corn starch, 1-1/2 cups coconut milk and 1-1/2 cups whipping cream (omitting the flour and half and half). Both turned out yummy. I think the second one was a little more flavorful and rich though. Excellent!

I am a personal chef and had LOTS of pie orders this thanksgiving. I have a reciped I have been using forever, but thought I would try this one for one client. It got great feedback. I did make a mini one for our house and the rating was good. It will be a keeper.

Wow! This recipe was both easy and delicious. I also did 1 1/2 cups coconut milk and 1 1/2 cups half and half., and 1/3 cup cornstarch instead of flour. I microwaved it, even though I was nervious about that. It took about 5 minutes and I whisked it after every minute. I topped mine with whipped cream, but I may do a meringue next time. I am from Hawaii, so I know coconut, and this one is a keeper! The best thing is, with a pilsbury ready made pie crust, it's a 10 minute recipe with a homemade taste!

This is an awesome recipe. I did make a few changes of my own. Instead of 3 cups of half&half, I used equal parts of coconut milk and half&half. I used 3 egg yolks instead of 2 eggs. I also did not toast the coconut to put inside the filling. I just did it for the top. I used a home-made whipped topping and added 1/2 teaspoon of coconut extract and 1/2 teaspoon vanilla extract. This is so yummy!

I did as users suggested and made the recipe with coconut milk, as it turned out my can was 2.5 cups. I did the 5 minute microwave trick and stirred every minute, that was a great suggestion. I also used the suggestion of adding coconut extract to my whipped cream, that was great. I wasn't sure how much whipping cream to use, so I used two cups- it wasn't quite enough. Next time I will use 2.5 or maybe even 3 cups; I think that will be perfect. One thing I did that I feel made it better was puree the coconut. I did not toast the coconut I put in the custard, instead I put it in the food processor with my sugar and I LOVED it! The texture of coconut bothers me, so I love that trick. I did not sub corn starch for the flour, but I will next time- it didn't set up quite as well as I would have liked. We loved this- and I will make it again....and again.

This is the easiest recipe. I had never made a pie before and my boyfriend loves coconut cream pie, so gave it a try, followed the directions exactly...it was awesome! Great recipe, easy and very yummy!

I have made this several times and it has become a family favorite. I have used skim milk or coconut milk in place of the half and half. The coconut milk makes it more rich but the skim milk certainly taste wonderful also. I have also made it with flour or corn starch and it does not make a diffrence. I do recommend cooking the filling in the microwave and stiring it ever minute or so. Much, much easier this way.

Delicious! I followed the suggestion that others made regarding using coconut milk + enough 1/2 & 1/2 to make 3 cups. I also made my own whipped cream using 8 oz whipping cream, 2 tbl powdered sugar, 1/2 tsp vanilla & 1/2 tsp coconut extract. (This was my first attempt and turned out quite well) Other than this, I followed the directions as stated. It made the perfect amt from my 9" pie shell. It was refrigerated for approx 3-4 hours before serving but I found it to be even better the next day! Another great addition to my recipe book!
