This recipe is delicious! I altered by cooking frozen boneless chicken, salsa, canned mushrooms and a little water in the crockpot. Once the chicken is cooked through, I add 2 cups of Minute rice for about 20 minutes. Then, I pour the mixture into a 9 x 13 casserole, add sour cream and sprinkle with cheese. Last, I warm in 350 degrees oven for about 10 minutes. DEEEElicious!

Absolutly scrumptious !!!! Easy to prepare and my picky man loved it!!! Made to exact recipe and now added in rotation. We use leftovers for making stuffed peppers!!!

mom made this for dinner the other day & shared - I love it! she didn't add mushrooms, but did add a small can of the chopped green chiles, and probably extra cheese, knowing mom! I'll make it hotter with jalapenos instead of green chiles, and definitely NOT mushrooms, they don't fit with the Mexican flavors. I'll probably throw in some sliced black olive tho - that would be yummy! I think this would be good with pork instead of chicken also. mmm - making me hungry just thinking about it!

This was a very good recipe and very easy to make. I didn't have fresh mushrooms, so I used canned. Next time I will try the fresh one because I think it would be better with fresh.

Pretty yummy! I spread refried beans on the bottom of the pan, baked tortilla strips on top, as well as extra cheese and a sprinkling of green onions. The crunch added something. Made it without mushrooms.

I love this recipe and I followed the directions which is not I will make this over and over. I like the fact that it didn't call for cream of something soup. I can make it for my gluten-free friends.

Oh-so-good. I thought that I was following the recipe. I looked at it this morning, and was going from what turned out to be faulty memory. What was different...1 large onion diced also some crushed garlic, jalpeno, 3 C of rice. Crushed Tortilla chips on top and cheese. Delish
