Ingredients

  • 15 graham crackers
  • 1/2 cup butter
  • 1 cup packed brown sugar
  • 1/2 cup milk
  • 1 cup graham cracker crumbs
  • 1/2 cup flaked coconut
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped cherries (optional)
  • 2 1/2 cups confectioners' sugar
  • 3 tablespoons butter
  • 3 tablespoons milk

Directions

  1. Line a 9 x 9 inch pan with graham crackers.
  2. Boil together 1/2 cup butter or margarine, 1 cup brown sugar and scant 1/2 cup milk for two minutes.
  3. Remove from stove and stir in: graham cracker crumbs, coconut, chopped walnuts, and cherries. Pour on graham crackers in pan. Place a layer of graham crackers on top of filling. Spread with Butter Icing.
  4. To Make Butter Icing: Combine icing sugar, 3 tablespoons butter or margarine and approximately 3 tablespoons of milk, or amount needed to give a spreading consistency.

This was really good. I think it needed about half of the frosting though.
