boneless, skinless chicken breasts
Jamaican or Caribbean jerk seasoning
red or green bell pepper, chopped
1 (10 ounce) can
diced tomatoes and green chilies (mild or regular), undrained
Lindsay® Spanish Olives Stuffed with Pimiento, drained and halved
golden or dark raisins
Optional Toppings: minced plum tomato, chopped fresh basil
TERRIFIC TASTE...I was looking for a new way to cook Boneless Pork Chops. I had all ingredience except the canned tomatoes with green chilis. So I used canned diced tomatoes and added 2 shakes
of red pepper flakes. The first time I tasted during cooking...I checked the recipe to see if I had forgotten anything...sure enough, I needed to add the 1 T Worcestershire sauce! This really mellows the flavors to give it a TERRIFIC TASTE!
I froze 2 servings and can't wait to have it again
on a busy night. I'm sure it would be great with Chicken.
This is probably the best recipe that I have gotten off of this sight so far. It is extremely good and really easy to make. I followed the recipe exactly and it turned out perfect ... but the best thing about it is you can work with it to suit your tastes. There is a lot of room to play with the flavors. P.S. Try making this with shrimp ~ OMG even better than the chicken!!!!
I really enjoyed these flavors. I didn't have capers, but I didn't miss them. And I made my own jerk seasoning from a recipe on this site. I probably used more than was called for in the recipe, so it was nice and spicy. I served it over steamed white rice. Very flavorful.
This is one of the best recipes I've made. I made it for my father and stepmother, both from Cuba, and they loved it! My husband says it's one of my best dishes. Excellent flavor, and the chicken is extremely juicy.
This was a great recipe. Lots of veggies to give extra flavor. I added a little more jerk seasoning and worchestershire sauce to make it a bit spicier. The only reason I gave it 4 stars was because i wasn't crazy about the flavor the red peppers added to it. next time i'll leave them out. I'll definitely make this again!
I think this needs a little cilantro and/or lime juice to make make it a bit more "piquant." I love the combination of the olives, raisins, and capers. don't skimp on on substitute the jerk seasoning.
Delicious and quick recipe. Probably one of the best chicken dishes I've ever cooked up!
