Wow this was soooo good! Even my husband liked it, and he doesn't like zucchini (or most vegetables). I never salted zucchini to draw out moisture before, but it was certainly a good idea! My lasagna was only a little watery. The only bad thing about this dish is the prep time!
I added a good tablespoon or so of minced garlic to the meat, and instead of tomato sauce, I had fire-roasted tomatoes I chopped in. I omitted the mushrooms but added a smidge of carrot to the spinach layer, and used mostly dried herbs. This recipe seems very versatile, but I would suggest NEVER ommit the wine...it was the perfect accent flavor! Definitely making again!!
