Ingredients

  • 1 mango - peeled, seeded, and chopped
  • 1/2 red bell pepper, minced
  • 1 jalapeno pepper, seeded and minced, or to taste
  • 1/4 cup chopped green onion
  • 1 lime, zested and juiced
  • 1 tablespoon vinegar
  • 1 tablespoon olive oil
  • salt and ground black pepper to taste

Directions

  1. Stir the mango, red bell pepper, jalapeno pepper, green onion, lime zest, lime juice, vinegar, olive oil, salt and pepper together in a bowl. Refrigerate at least 30 minutes before serving.
