Ingredients

  • 1 cup all-purpose flour
  • 1 cup quick cooking oats
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/4 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/2 cup peanut butter
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups any flavor fruit jam
  • 1/2 cup all-purpose flour
  • 1/2 cup quick cooking oats
  • 1/4 cup packed brown sugar
  • 1/8 teaspoon baking soda
  • 3 tablespoons butter, softened

Directions

  1. Beat 1/2 cup butter or margarine until smooth. Add 1/4 cup white sugar and 1/2 cup brown sugar and beat well. Add egg, milk, peanut butter and vanilla and beat well. Stir in 1 cup flour, 1 cup oats, and 1/2 teaspoon baking soda.
  2. Spread in a greased 13 x 9 inch pan. Spread preserves all over top. Sprinkle with crumb topping.
  3. To Make Topping: Mix together 1/2 cup flour, 1/2 cup quick oats, 1/4 cup brown sugar, 1/8 teaspoon baking soda, and 3 tablespoons softened butter or margarine until crumbly. Sprinkle over the top of the preserves.
  4. Bake at 350 degrees F (175 degrees C) for 18 - 20 minutes.
